These summer days have been jampacked activities with the kids. The pool was full of friends and kiddos as they try to cram every last ounce of fun in before school starts.
Summers go by so fast, especially if you’re a teacher. Some of my friends went back yesterday and some today. 😢
A young teacher friend and I took the time to run/walk this morning and were reflecting on how there are people. who are almost scared to retire, She took off a few years to rear her young sons. She said “Although I’m not retired, I don’t understand why people have trouble making that decision. There’s life outside of the classroom.”
Very true, but I get it. You need something to keep you busy, you need income, and insurance. You need an exit strategy. Many people are unprepared for retirement because they don’t have these things planned out.
There are many precious moments in this life but this year is flying by and Maddox will probably be walking soon!
This is the second year JT and I went on a Viking summer cruise to the Mediterranean, the first destinations on our current travel list. We’ve met so many new friends and seen so many beautiful places and love the Viking atmosphere…they spoil you!

It’s becoming a tradition for us, and allows us to step away from our routines.
Since I manage my business primarily online, I sometimes catch myself checking my phone for notifications or emails during the day.
I try to enjoy the precious moments with him and my family scheduling my “work hours” around them. When the kids show up spontaneously to swim, I stop and enjoy them, then pick up my “work” later.
I did not opt in for an international cellular plan and kept my phone on airplane mode most of the trip, turning on WIFI for a little while in the afternoon when we were resting from our excursions to check in with the kids and others.
Orders still ran even when I was off the grid. 🙌🏼
It reminded me that one of the reasons I started this business is to have the option to have flexibility in life, for example, taking a vacation when I wanted, not according to the schedule I was given when I was teaching.
I do enjoy making my own schedule, but it’s always in pencil!
I participated in a Greek cooking demonstration where we prepared an easy Greek condiment called Tzatziki (Pronounced ZAT ZEE KEE). I want to share the recipe with you. I’ll be sharing a few others this month too.
Tzatziki (traditional dip or condiment for gyros or other meats)
Ingredients:
1 small cucumber, grated
1 small carrot, grated
2 cloves garlic, grated
1.¾ C Greek yogurt (full fat)
1 t Salt
1 pinch black pepper
1 T red wine vinegar
2 T extra virgin olive oil
